All of these things are pretty run of the mill food-wise, but they always elicit surprised looks from my listeners. I think this is mostly because people think of eating Veg as being very restricted. But at this point i eat pretty much everything i did when i wasnt veg, but in a healthier vegetable based form.
My fave brunch menu: Quiche, blueberry pancakes, Tofurky italian sausage, fruit compote and hashbrowns.
makes 6 regular sized pancakes
1 cup flour
1 tablespoon turbinado sugar
2 tablespoons baking powder
1/8 teaspoon salt
1/2 t cinnamon
1 t vanilla
1 cup soymilk
2 tablespoons vegetable oil
1/2 c frozen or fresh blueberries
Mix dry ingredients together.
Stir in wet ingredients.
Fold in the blueberries. (working with frozen ones helps prevent bleeding)
Spoon amount of batter for desired pancake size in a pan over medium heat.
Flip the pancake when the top starts to look more solid and the edges brown
